Carrot Salad with Rosemary and Mint

Carrot Salad with Rosemary and Mint

Servings: 3 people

Ingredients

  • 5 Organic carrots peeled and grated
  • 20 Organic walnuts
  • 2 tbsp Raisins
  • 2 tbsp Extra virgin olive oil
  • Juice of half lemon
  • Zest of lemon
  • 15 sprigs Rosemary chopped
  • Small handful mint chopped
  • Sea Salt to taste

Instructions

  • Place the grated carrots into a serving dish
  • Toast the walnuts on a baking tray, at 180c for 3-5 minutes, until you start to smell the nut. Remove from oven and break into pieces and add to the carrots
  • Add the raisins
  • Pour the olive oil into a small mixing jug with lemon juice, lemon zest, rosemary and mint. Mix well.
  • Pour over the salad and let sit for 20 minutes before eating. Enjoy!
