Banana Bread with Goji Berries February 28, 2020December 11, 2014 by Peter O'ConnellSugar Free, Mixed seed Banana Bread with Goji Berries:Making this bread is much easier than getting your mouth around the title!200g of buckwheat flour1 tsp of baking powder (gluten free)4 overripe bananas50g of mixed seeds such as hemp, sunflower, Goji berries- as many as you wish to addCinnamonCoconut oil to grease the baking tin100ml of non dairy milk such as unsweetended almond milk50ml of water- add more if batter is too thickMethod:Pre-heat your oven to gas mark 6/ 210 CIn a large bowl mix all of your dry ingredients excluding berries and seedsPlace in your food processor and add in your banana in chunks, add your liquid and blitz until well mixedAdd your goji berries and seeds and give it one more blitzGrease your baking tin with the coconut oilPour the mixture in and set into your oven for 1 hour- checking occasionallyThat is it!Once your bread is ready, enjoy with some nut butter.Each tasty mouthful provides you with a great source of protein and fibre!
