Butter Bean Burgers

A great post workout meal, packed with protein, as well as a good source of Iron, Magnesium and Zinc.

What you need:

  • 2 tins of butter beans rinsed
  • 1-2 cloves of garlic chopped
  • 1 red pepper
  • 2- 3 tbsp of seeds; 1 tbsp in the burger mix, the rest for coating
  • 3 spring onions, finely chopped
  • 1 small handful of sun-dried tomatoes, finely chopped
  • 1 tsp of chilli paste
  • 1 handful of basil
  • A little coconut oil for frying.

What to do:

  • Place the red pepper on a tray in the oven (180C) for 7-10 minutes, until starts to brown. Place in a bowl and cover with cling film for about 5 minutes and remove the skin (really nice and sweet) and chop finely.
  • Now combine all other ingredients and mash to form a paste like consistency.
  • Shape into burgers.
  • Place the rest of the seeds on a plate and coat burgers.
  • Fry on medium heat or bake in the oven until cooked.
  • Served here with sweet potato wedges…Delicious
