Banana Bread with Goji Berries

Sugar Free, Mixed seed Banana Bread with Goji Berries:

Making this bread is much easier than getting your mouth around the title!

  • 200g of buckwheat flour
  • 1 tsp of baking powder (gluten free)
  • 4 overripe bananas
  • 50g of mixed seeds such as hemp, sunflower,
    Goji berries- as many as you wish to add
  • Cinnamon
  • Coconut oil to grease the baking tin
  • 100ml of non dairy milk such as unsweetended almond milk
  • 50ml of water- add more if batter is too thick

Method:

  • Pre-heat your oven to gas mark 6/ 210 C
  • In a large bowl mix all of your dry ingredients excluding berries and seeds
  • Place in your food processor and add in your banana in chunks, add your liquid and blitz until well mixed
  • Add your goji berries and seeds and give it one more blitz
  • Grease your baking tin with the coconut oil
  • Pour the mixture in and set into your oven for 1 hour- checking occasionally

That is it!

Once your bread is ready, enjoy with some nut butter.
