Easy Asian style salad

Try this delicious and easy, Asian style salad.

Ingredients:

  • 1 large courgette
  • 2 medium carrots
  • 1 sweet red pepper
  • 1 bunch of asparagus
  • 1 can of butter beans
  • 2 tablespoons of sesame seeds
  • Coriander to sprinkle

Shall all the vegetables with a peeler to create nice long thin shreds and toss together in a large salad bowl with the sesame seeds.

asiansaladDressing:

  • 2 tablespoons of Tamari sauce
  • Juice of 1 ripe lime
  • 2 cloves of garlic
  • 1 small chilli
  • An inch of fresh ginger
  • 1-2 tablespoon of sesame oil

Crush the garlic, chilli and ginger in a pestle and mortar, add all the liquid ingredients and mix together.

Add dressing to the salad and toss evenly

Sprinkle with chopped coriander.
