Place the grated carrots into a serving dish
Toast the walnuts on a baking tray, at 180c for 3-5 minutes, until you start to smell the nut. Remove from oven and break into pieces and add to the carrots
Add the raisins
Pour the olive oil into a small mixing jug with lemon juice, lemon zest, rosemary and mint. Mix well.
Pour over the salad and let sit for 20 minutes before eating. Enjoy!
