Simple Sweet Potato Brownies

Ingredients

  • 1 cup mashed sweet potato
  • 1/2 cup smooth nut butter of choice a natural, unsweetened version
  • 2 tbsp pure maple syrup or unrefined honey
  • 1/4 cup cocoa powder

Optional extras

  • cinnamon, diced hazelnuts/walnuts, cocoa nibs or goji berries

Instructions

  • Preheat oven to 350 degrees & grease a small cake pan or loaf pan (set aside)
  • On the stove (low heat), melt down your nut butter and maple syrup (or honey) and add to mashed sweet potato and cocoa power in a large mixing bowl
  • Stir in additional ingredients if using
  • Pour the mixture into greased pan and bake for 20 mins or until cooked through
  • Remove from oven and allow to fully cool
